Winemaking notes
Santa Carolina, founded in 1875 and currently owned by the Larrain family, proudly champions Chilean Heritage with a focus on innovation. Through the journey of the valleys, Santa Carolina respects each varietal's typicity and treasures the expression of fruit. The estates, owned and managed by Santa Carolina, are located in Maipo, Rapel, Leyda, Casablanca and Colchagua.
Viticultural notes
The grapes were grown in the La Rinconada vineyards in the Rapel Valley, close to the Cachapoal River which receives a large amount of rain during the short winter months and has long summers of cool breezes and sunshine. Temperatures vary greatly from warm days to cool nights which allow the grapes to ripen slowly to maintain natural acidity and develop complex flavours. Hand picked grapes, cold maceration, traditional fermentation with controlled temperature 28°C in cement tanks. 8 months ageing in French and American oak prior to bottling.
Tasting notes
A deep, rich and complex wine with dark plum fruit flavours, cassis, currants and hints of spice on the long finish.
Pairing notes
Food Pairing: Indian curry, Turkish kebab or spicy chicken wings.
