Winemaking notes
The grapes for this wine were picked plot by plot, rigorously selected in the vineyard for quality, and grapes from each plot were vinified separately. The grapes were unloaded from 20 kg crates directly into the destemmer-crusher, from which they dropped by gravity into small stainless steel tanks with automatic pumping over and temperature control. The alcoholic fermentation took about 8 days, at an average
temperature of around 28ºC. The Touriga Nacional from one particular plot remained on its skins post-fermentation for a further 20 days. The malolactic fermentation took place in stainless steel tanks, followed by 12 months ageing in new and used fine-pored French oak barrels, sourced from 8 different coopers. During the maturation phase, the wines were tasted many times to monitor their progress and decide on the blend. The wine was fined, filtered and
bottled.
Viticultural notes
All the grapes used in this wine were produced in accordance with the Sustainable Agriculture Integrated Production guidelines as defined by the International Organisation for Biological and Integrated Control (OILB/IOBC).
Tasting notes
Quinta dos Carvalhais Touriga Nacional is ruby-red in colour. The aroma is intense but nevertheless delicate, a perfect harmony of ripe red and black fruits, with floral and herbal notes that give the wine freshness, and subtle
oaky flavours from the time it spent ageing in barrel. The same flavours are evident on the palate. This is a wine of elegance and balance, with smooth tannins providing structure. The aromatic quality persists through to a long
finish.
Pairing notes
After ageing in bottle, a slight natural sediment may form, and the wine will need decanting before serving. Ideal serving temperature is between 16ºC-18ºC. This is a great food wine, delicious, for example, with octopus, roast pork or mushroom risotto.
