Winemaking notes
The grapes arrived at the winery in 20kg boxes, which were unloaded into a pneumatic press. After the pressing
of the grape clusters, the must was subject to static decanting at low temperatures for 24 hours. The wine was
subsequently transferred to stainless steel tanks where fermentation took place. Half of the wine proceeded to
barrels of new French oak where it fermented at 19ºC for a period of 20 days.
70% of the lot fermented and aged for around 6 months in different-sized barrels of French oak (225, 500, 1000
and 2000L). During this period, the wine frequently underwent "batonnage" to increase the sense of body on
the palate and allow the wood to add complexity to its aroma. The remainder fermented and aged in stainless
steel tanks, and this contributed to a greater balance in the final blend.
Tasting notes
A clear citrine yellow colour,this wine has notes of yellow-pulped fruit, such as peaches and nectarines, floral tones
of jasmine and orange blossom, and hints of cedar. It is a well-integrated wine that reflects its ageing in oak
barrels.On the palate, it has great aromatic intensity with further aromas of peach and floral notes coming to the
fore.A crisp acidity, both firm and well-integrated, invites a balanced and persistent finish.
Pairing notes
Serve directly from the original bottle. Recommended temperature: 8ºC to 10ºC. Drink within 24 hours of
opening.
