Winemaking notes
The hand-picked grapes are cooled before entering the winery. After arriving at the winery, the grapes are destemmed and gently pressed at low temperatures before undergoing cold static decanting for 3 to 5 days, with the lees being removed in the first 24 hours. Fermentation takes place at a controlled temperature of 15-16°C. MATURATION After alcoholic fermentation, the wine is aged for 6 months on the lees, with frequent ‘batonnage’. 15% of the blend is aged in used French oak barrels.
Tasting notes
Clear citrine colour. Exuberant aroma with notes of stone fruit, such as peaches and apricots. Fresh on the palate with notes of ripe fruit standing out balanced with notes of wood ageing, giving it great creaminess and complexity. Long, lingering finish.
Pairing notes
SERVE Serve directly from the original bottle. Recommended temperature: 10ºC to 12ºC. Drink within 24 hours of opening. ENJOY The profile of this wine makes it ideal to accompany seafood dishes, such as grilled fish and shellfish. It can also be paired with more elaborate Portuguese dishes such as seafood rice or cataplana.
