Winemaking notes
Whole grape pressing, fermentation in stainless steel at 14-15°C for about 20 days with the use of selected yeasts. The wine rests on the lees for about 4-5 months with regular batonnage and an additional 15 days in bottle.
Viticultural notes
The vineyards are on the Fojaneghe estate in the communes of Mori and Isera (Trentino) at a height of 300 metres above-sea-level. The ground is typically layered sedimentary moraine. Breezes from Lake Garda bring good temperature variations from night to day and excellent general ventilation.
Tasting notes
Bright straw yellow in colour. Elegant, refined, floral and fruity aromas on the nose with hints of apples and pears and a slight touch of minerality. Good supporting acidity to give balance to soft structure, giving perfect harmony of taste. Long and attractive on the finish, which ends with the same fruitiness and minerality first seen on the nose.
Pairing notes
An excellent aperitif. it goes very good with antipasti, soups, fish and white meats. Serve at 10°C (50°F).
