Winemaking notes
Fermentation is split between temperature-controlled stainless steel tanks and French oak barrels from the Tronçais forest. The wine is aged on its fine lees for 7 to 8 months with regular stirring (bâtonnage) to build texture and richness. Bottling occurs only after a full year of ageing, followed by several months of bottle rest before release.
Viticultural notes
From the estate's oldest vines, planted on flint-rich slopes originally farmed by the monks of Saint-Satur. This exceptional terroir imparts unrivalled minerality and length. Low yields, inter-row grassing and organic inputs only. Certified Organic Agriculture.
Tasting notes
Luminous pale gold. The nose is powerful and complex: flint, spice and Sauvignon blossom meld with a characteristic vine sap quality. The palate is full, rich and concentrated, with exceptional mineral persistence and exemplary balance.
Pairing notes
Serve at 12 °C. A natural match for rich French cuisine featuring white meats — slow-cooked pork, Alsatian baeckeoffe or pork strudel with apples and raisins. Its richness and freshness beautifully balance bold, generous flavours.
