Winemaking notes
In order to preserve the full expression of its natural bouquet, this Chablis is not oak-aged. Vinification is carried out exclusively in stainless steel or fiberglass tanks. These temperature-controlled vessels promote a straightforward fermentation process and the optimal development of aromas.
Viticultural notes
Our Chablis wines are produced on particularly well-suited terroirs. The soil is composed of marly limestone, containing a very high concentration of marine fossils such as Ostrea virgula, a small comma-shaped oyster.
The name “Carré de César,” chosen for this Chablis, originates from the fact that César de Vendôme became the Lord of Maligny. César was the illegitimate son of King Henri IV and Gabrielle d’Estrées. The soil composition imparts the wine with its pronounced minerality and its very distinctive Chablis character. The average age of the vines is approximately 30 years.
Tasting notes
The Chablis “Carré de César” is a lively, well-structured, and mineral-driven wine. Thanks to its terroir, it expresses the typical flinty, gunflint character characteristic of Chablis. It is also a wine of great finesse. The 2024 vintage shows notable richness, elegance, and a minerality that is purely Chablisian.
