Winemaking notes
70 percent of the grapes are hand picked, the remaining 30 percent is picked mechanically from the Central Valley. Ideal growing appellation for Cabernet Sauvignon. 85 % is Syrah and the other 15 % are from a variety of other red grapes. The wine spends nine months of ageing in stainless steel tanks followed by an additional nine months of ageing in barrels.
Viticultural notes
Mediterranean climate, alluvial and colluvial soil. Some estates present red clay soil. The soil is alluvial with gravel. Low in fertility.
Tasting notes
This bright, clean Cabernet Sauvignon is a beautiful ruby red color. It has an intense nose displaying red fruits such as plum and raspberry with notes of cacao, tobacco and mocha. Full on the palate with silky, balanced and juicy tannins, it is a wine with great volume and a long finish.
Pairing notes
Enjoy this wine to its fullest with all kinds of meat, especially grilled, as well as cheese and pasta.
