Winemaking notes
Harvest: exclusively manual with rigorous selection of bunches of optimal health and ipeness. Elaboration: traditional method, 100% de-stemmed. 4 days of cold maceration. 7 days of alcoholic
fermentation with pumping over (1-2 per day).
Extended maceration on skins with light punchdowns. Controlled temperature between 28°C
and 29°C (82°F and 84°F). Malolactic fermentation in stainless steel tanks.
Aging: 14 months in French oak barrels. 20% in new
barrel of 225L and 400L and 80% in second use
barrels. Racked every 4 months.
Viticultural notes
The vineyards are situated in the designation of
Origin Toro, in the villages of Valdefinjas, Morales
de Toro, Toro and Venialbo. Sandy loams soils
at an average altitude of 700 meters (2,296 ft).
Our vineyards are a patchwork of tiny plots
spreading over 205 acres, represented by the
mosaic on the Termes capsule.
Tasting notes
Color: Red cherry with purple highlights.
Aroma: Complex and persistent red fruit notes
(raspberry and redcurrant), with fresh aromatic
herb aromas (eucalyptus and thyme).
Palate: A vibrant wine, with a fruity and fresh
attack. Full-body and persistent, this wine shows
well integrated and round tannins. An intense
finish for a really elegant and balanced wine.
