Winemaking notes
Vinified using grapes from selected plots that were harvested at the optimal point of phenolic and aromatic maturation. After destemming and soft-crushing, the wine fermented in stainless steel tanks at a controlled temperature of 26ºC for 8 days. After attaining the requisite organoleptic balance, the must was pressed. The resulting wine was intense, elegant and reflected its region of origin.
Viticultural notes
This wine embodies a secret from Alentejo. A secret about the soul of Vidigueira that requires tranquility in the telling and an Alentejo's calm, free from daily concerns, as peaceful as the rolling plains of Herdade do Peso where this wine was born. Listen, breathe, taste. In Portuguese, 'sossego' means 'peace' or 'quiet'. The name says it all
Tasting notes
A vibrant ruby colour. This wine has intense notes of red fruit. On the palate, it is smooth and elegant, with prominent tannins. A balanced acidity reveals a long and fresh finish. After malolactic fermentation, the wines aged for 6 months in stainless steel tanks. The wine underwent light fining and filtration prior to bottling.
Pairing notes
This wine's balanced tannins, acidity and fruitiness give it the versatility to pair wonderfully with pasta dishes, white meat and traditional cuisine.
