Winemaking notes
Vinified in Herdade. Grapes were selected from the best plots of the estate, which all received different viticultural monitoring, and harvested at the optimal point of maturation. The grapes were manually selected and subject to further soft crushing and cold maceration (10ºC) for 3 days. This was followed by fermentation in stainless steel tanks at an automatically-controlled temperature of 28ºC for around 9 days. This procedure was followed by the separation of the finest wine and the soft pressing of the must. After malolactic fermentation, the wines of each grape variety were transferred separately into new (40%) and 1-year-old (60%) high-quality French oak barrels where they matured for around 12 months. The final blend followed numerous tastings to ensure that only the best barrels were selected. The wine was subsequently kept at a controlled temperature of 15ºC for 6 months to achieve the right balance for consumption.
Viticultural notes
All the grapes used in this wine were produced in accordance with the Sustainable Agriculture Integrated Production guidelines as defined by the International Organisation for Biological and Integrated Control (OILB/IOBC).
Tasting notes
A very deep garnet-red colour. Great intensity and aromatic complexity with a strong component of well-ripened red and black fruit (plums, raspberries and blackberries), enriched by spicy, balsamic notes (pepper, menthol and tobacco). Full-bodied with firm tannins of high quality, balanced acidity and an intense,
long and complex finish.
Pairing notes
The bottle should be stored in a horizontal position and in a cool, dry place away from light. To preserve its great quality, this wine was bottled without cold treatment and a deposit may naturally form in the bottle. Decant before serving. Preferably serve at a temperature between 16ºC-18ºC. Herdade do Peso Reserve is the ideal choice to accompany rich and spiced meat, game and strong cheeses.
