Viticultural notes
This is a very beautiful valley within the Chablis vineyard, located in the commune of Beines. Once planted with vines, it was abandoned after the phylloxera crisis due to the steep slope, which made cultivation difficult. The site is exposed to the south–south-east. The slope, extending over 200 metres, can reach gradients of 45%, and in some places up to 50%. The soil is very poor, forcing the roots to penetrate deeply in order to access water.
Tasting notes
The estate is the main owner in the “Vau de Vey” climat, with a total of 7 hectares of vines in production. This distinctive terroir produces a classic Chablis Premier Cru, combining pronounced minerality with roundness and fruit expression. It is a wine of great finesse. The 2024 vintage is highly characteristic—pure, complex, and intense—opening with notes of fruit, citrus, and minerality.
Pairing notes
The Chablis Premier Cru “Vau de Vey” pairs particularly well with grilled fish
