Winemaking notes
100 % of Vermentino is used in this wine. Following a very soft pressing, the fermentation takes place for about 13-16 days in temperature-controlled stainless steel tanks. An additional 3 months of ageing takes place in stainless steel tanks.
Viticultural notes
The Vermentino is sourced from vineyards located in the Maremma zone of Southern Tuscany. the soil is composed of sandstone with a strong presence of friable rock. Tasting notes
Straw yellow in colour with intense hints of apricot and grapefruit, accompanied by notes of sage. In the mouth the acidity is in perfect balance which gives this wine a long and persistent fresh finish on the
palate.
Pairing notes
Excellent in combination with fish-based dishes, such as seafood salad, tuna tartare or with vegetarian dishes such as cauliflower pie or roasted tomatoes.
