Winemaking notes
Melon is a Muscadet, or Melon de Bourgogne, vinified dry, made exclusively from Melon de Bourgogne. After pressing and settling, the must ferments in tank at a low temperature. The wine then remains on its fine lees throughout the winter, which brings roundness, complexity, and a slight natural spritz from the lees. This light fizz helps preserve the freshness and the distinctive iodized character of Muscadet.
Tasting notes
This Melon de Bourgogne, or Muscadet, from Loire, is dry, crisp, and saline - the ideal companion for ceviche or mussels in white wine. On the nose, it reveals fresh lemon and green apple, with subtle mineral and iodine notes. Lively and refreshing on the first sip, it becomes creamier and more supple on the palate thanks to several months of aging on lees. The finish is persistent, with lingering citrus and saline nuances.
